The assembled lasagna. While I was watching TV, I cooked up hot Italian turkey sausage with mushrooms and garden tomatoes into a thick sauce. The lasagna is layers of eggplant, low fat cottage cheese, homemade mozzarella cheese, and the sauce. It's topped with some fresh basil I had left over.
